Ammonia-process caramel colours can carry 4-MEI, which California lists under Proposition 65.
Classes III and IV are made with ammonia compounds and can contain 4-methylimidazole as a by-product. California requires a Prop 65 warning above a threshold, which pushed several manufacturers to reformulate. Classes I and II do not have this issue but labels rarely say which class was used.
